- 12 cups cherry tomatoes, halved
- 21 medium cucumber, sliced
- 3½ small red onion, thinly sliced
- 41 cup arugula (or mixed salad greens)
- 5¼ cup black olives, pitted
- 62 tbsp extra-virgin olive oil
- 71 tbsp fresh lemon juice or red wine vinegar
- 8Salt, to taste
- 9Freshly ground black pepper, to taste
- 10Optional: shaved Parmesan cheese or fresh basil leaves
👨🍳Instructions
Wash and dry all vegetables thoroughly.
Cut the cherry tomatoes in half and slice the cucumber.
Thinly slice the red onion and add it to a large salad bowl.
Add arugula, tomatoes, cucumber, and olives to the bowl.
In a small bowl, whisk together olive oil, lemon juice (or vinegar), salt, and pepper.
Pour the dressing over the salad just before serving.
Toss gently to combine all ingredients.
Top with Parmesan shavings or fresh basil if desired.
