  • 12 cups cherry tomatoes, halved
  • 21 medium cucumber, sliced
  • 3½ small red onion, thinly sliced
  • 41 cup arugula (or mixed salad greens)
  • 5¼ cup black olives, pitted
  • 62 tbsp extra-virgin olive oil
  • 71 tbsp fresh lemon juice or red wine vinegar
  • 8Salt, to taste
  • 9Freshly ground black pepper, to taste
  • 10Optional: shaved Parmesan cheese or fresh basil leaves

Wash and dry all vegetables thoroughly.

Cut the cherry tomatoes in half and slice the cucumber.
