- 51/2 tsp salt
- 61/2 cup kimchi, chopped
- 71 ripe mango, diced
- 81 avocado, sliced
- 91 small cucumber, julienned
- 101 medium carrot, shredded
- 112 tbsp soy sauce
- 121 tsp sesame oil
- 131 tsp toasted sesame seeds
- 142 green onions, thinly sliced
- 15Optional: nori strips for garnish

Rinse sushi rice under cold water until water runs clear.
Combine rice and water in a pot and cook according to package instructions.
Once cooked, transfer rice to a bowl and gently fold in rice vinegar, sugar, and salt. Let it cool slightly.
In a small bowl, toss kimchi with soy sauce and sesame oil.
Assemble the bowl: place sushi rice at the base, then top with diced mango, sliced avocado, julienned cucumber, shredded carrot, and kimchi.
Sprinkle with sesame seeds and green onions.
Garnish with nori strips if desired and serve immediately.
