Kvas is a traditional Ukrainian fermented beverage made from rye bread, lightly sweetened and gently fermented. It is refreshing, mildly tangy, naturally fizzy, and very low in alcohol, making it popular for all ages during warm seasons.

🛒Ingredients

  • 1300 g rye bread, sliced and toasted
  • 23 liters water
  • 33-4 tbsp sugar (adjust to taste)
  • 45 g active dry yeast
  • 530 g raisins (optional, for natural sweetness and fermentation)
  • 61 tbsp honey (optional)

Toast the rye bread slices in the oven until dark golden but not burned.

Bring water to a boil, then pour it over the toasted bread in a large heatproof container.

Cover and let steep for 6–8 hours or overnight.

Strain the liquid, discarding the bread solids.
